2022 Ashanta Wines 'Sidra' Coferment
Organic apple juice started spontaneous fermentation on native yeasts in stainless tank for 10 days. It was then gravity fed into an open top fermentor with freshly pressed Old Vine Carignan skins leftover from a rose pressing. It co-fermented for 5 days days, then was bottled under cap at 1.5 brix.
No additions or subtractions.
Unfined, unfiltered, zero SO2.
