“Part of our upcycling program with local organic farms who supply us with unsold fruit that would be mulched or wasted, usually at the peak of ripeness. This is made exclusively of damson plums only, a tannic variety which is also used to make wine and Rakia in the Balkans. It was undrinkably tannic until a year in the bottle. Foot crushed, fermented on skins and pits bottled at .3 brix to lock in the freshness and acidity. The pits lend a baking spice to the nose.”
