100% Chenin Blanc from organically farmed vines in Vouvray sandwiched between Huet and Foreau of all folks! Grapes are hand-harvested, directly pressed and spontaneously ferment in fiberglass tank prior to the completion of primary fermentation. The wine finishes fermenting under crown cap, to dryness, capturing the CO2 released as part of alcoholic fermentation (ancestral method). After 12-18 months sur latte the wine is disgorged and re-sealed with crown-cap. Unfined, unfiltered, no additional SO2.
