2023 Les Equilibristes 'Hirsute' Perigord White

70% Sémillon, 20% Sauvignon Blanc, 10% Chenin Blanc

The grapes are hand harvested. The Sauvignon Blanc macerates on the skin for 48 hours, and the Semillon and the Chenin are directly pressed. Fermentation occurs spontaneously with native yeast. 20% aged in 4 year-old barrels for 6 month with no top-offs. All of the wine is age on fine lees. Unfined & Unfiltered.
