25% milkfat provides a richer, creamier taste, a thicker body, and is better for baking. The higher milkfat content in European-style sour cream contributes to a richer and more complex flavor compared to American-style sour cream, which typically has around 12-16% milkfat. It's better for baking because it holds its shape better when baked in things like quiches, tarts, and cobblers, and adds richness and moisture to the dish. This makes it ideal for dolloping on top of a chili or enchiladas, or using it as a base for dips.
