2022 Pleiades 'Black Label' Cider

2022 Harvest of Newtown Pippin Apples from a 100 year old feral orchard in the mountains above Corralitos. This was a late season harvest, much of which were fresh drops. All apples were macerated and left on skins two weeks before pressing. Aged Sur Lie in neutral French Oak with bi-monthly batonnage for one year then blended with a small amount of late season apples from Tomales 2023 harvest at bottling.

Aged in bottle since Dec 14th 2023.
