NV Podere Sottoilnoce 'Saldalama' Rosato Frizzante
Saldalama is a dark pink sparkling blend of Grasparossa, Sorbara and Trebbiano modenese. The name Saldalama refers to the place where a blade is connected to a sword handle, and we see Max using the grasparossa grape to steer the character of the sorbara and trebbiano modenese. Sorbara and trebbiano modenese add lift and freshness to the alkaline cacao grasparossa nature. Fans of lambrusco grape variety lineage will feel a swell of love to know that the sorbara vines Max grafted over from Gabriele Ronzoni’s vineyard. He still remembers the day he spent taking cuttings from the elderly Lambrusco historian’s vineyard, his living museum of wine. Sorbara is atypical for the Modena hills, though beloved on the Modena plain. This is a lovely wine to eat alongside shoyu chicken, or chips, and a close friend to all things garlicky. From the Palona vineyard, also on Max’s property, where the average age is 15 year old vines that Max planted.
