Etteilla Le Chaos White, Petillant Naturel Sparkling Apple Grape Wine (750ml)

Etteilla Wines is a small winemaking project started by Anne Disabato and Noelle Vandendriessche. The two apprenticed for Tony Coturri and produced their first vintage out of Coturri Winery in Sonoma, CA. They make zero-zero wines and ciders with a focus on heritage vineyards that are committed to organic and sustainable farming practices.

Gravenstein, Viognier & Sauvignon Blanc co-ferment yielding a peach ring, orange creamsicle, crispy electric apple funk.

Stonehouse Vineyard grapes were foot-tread and left to macerate overnight. The majority of these were pressed and separated; the pressed skins and remaining unpressed grapes were rehydrated with Ratzlaff Ranch gravenstein juice and co-fermented for 6 days. Bottled as a pet-nat.
