2022 Everwild 'Love Potion' Red Blend

We've been wanting to make Cab Franc for a while now, and when we found a vineyard that was farming it Biodynamically, we knew this was the moment. We originally intended to make the wine as a single varietal cuvée, but when the fruit came in riper than expected (28 brix!) we had to pivot

How could we balance out this dense, deeply phenolic, ripe fruit with some acidity and lightness? We decided to make it into a co-ferment with some high-acid Chardonnay we had coming in that same week, and it really did the trick!

The Cab Franc was 75% destemmed and 25% left whole cluster. It was co-fermented with the direct pressed Chardonnay, given daily punchdowns for one week, pressed off to finish fermenting in a settling tank and racked to rest in nuetral oak barrels for 7 months. Indigenous yeast fermentation. Bottled unfined and unfiltered, with nothing added (zero zero).
