2021 Stagiaire 'Sapphires Samphires & Saturn Returns' Sauvignon Blanc
4th vintage of this wine made from a special old vineyard in Hopland. Dry farmed, organic, no tilling. For this vintage I decided to switch things up. Instead of destemming, the grapes were left whole cluster. Carbonic for about a week and then tread on for another week. Recognizably wine from this unique vineyard but somewhat softer and more accessible than Sapphires usually is at this stage in its life. Light ‘orange’ as always.
