Lightly sparkling rosé pet-nat
Patricia and Rémi Bonneton are making some of the most exciting natural wines in the Rhône Valley! Libres consists of directly pressed Syrah with whole-cluster Clairette that was macerated for one week in the Syrah juice before pressing. After a few weeks in vats, the wine is bottled and aged on the lees for six months. The wine was disgorged in early 2022, and no sugar was added at bottling. Neither sulfites nor additives were used at any stage of the winemaking process. This pétillant naturel (pét-nat) gives us notes of strawberries and raspberries, is dry, yet silky. This is great wine to begin the evening with, sharing with friends and family. In terms of pairing, it could be great while snacking on charcuterie, could pair well with borscht, and could be a lot of fun with a red fruit based dessert.
