2021 Ashanta 'Huzzah' Sparkling French Colombard
Hand sorted grapes were whole cluster foot-stomped and basket pressed into neutral French Oak. Fermented for 14 days in barrel then bottled under cap at 1.5 brix. Aged in bottle on the lees for 14.5 months. Hand-disgorged.
Bottled with no additions or subtractions. Unfined, unfiltered, zero SO2.
