Etteilla Le Chaos Red, Petillant Naturel Sparkling Apple Grape Wine (750ml)

Etteilla Wines is a small winemaking project started by Anne Disabato and Noelle Vandendriessche. The two apprenticed for Tony Coturri and produced their first vintage out of Coturri Winery in Sonoma, CA. They make zero-zero wines and ciders with a focus on heritage vineyards that are committed to organic and sustainable farming practices.

Gravenstein & Syrah co-ferment yielding a tart cherry, plush violet, crispy electric apple funk.

Parenti Vineyards Syrah destemmed and macerated for 3 days in a closed tank. The free-run juice and majority of grapes were pressed and separated. The pressed skins
and remaining unpressed grapes were rehydrated with Ratzlaff Ranch,gravenstein juice and co-fermented for 12 days Bottled as a pet-nat.
